Tin 18 cm square or 20 cm round

Mud Cake

INGREDIENTS

144 gr Dark Chocolate
144 gr Milk Chocolate
288 gr Butter
¾ tsp Instant Coffee
140 ml Water
244 gr Plain Flour
22 gr Cocoa Powder
¼ tsp + 1/8 tsp Bicab Soda
412 gr Caster Sugar
3 Eggs XL
30 ml Vegetable Oil or Canola Oil
¾ tsp Vanilla Extract
94 ml Buttermilk

GANACHE

112 gr Dark Chocolate
112 gr Milk Chocolate
Pinch of Salt
62 ml Thicked Cream

Preheat the oven 160 degrees Celsious. Greese the tin and line with baking paper, this will help you to remove the cake later.

In a pot place the dark chocolate, milk chocolate, butter, coffee and water and melt over low heat. Put aside to cool for 15 minutes.

Sift the flour, cocoa, sugar and bicab and stir together.​

In other bowl wisk the eggs, buttermilk, vanilla extract and oil and add to the flour. At this point it's like a normal sponge cake
 

When all the ingredients are incorporate add the chocolate mixture, stir together...

...and put in the pan previously lined with baking paper.

Bake for 1 hour and 15 minutes. After this time check with a stick to see if it's cooked. You know it's finish when the stick comes out clean. If isn’t put back in the oven for 10 minutes more. Some times any ovens need a more time baking. 

Let the cake stand overnight in the mould to settle, if you handle it when this warm it may break apart. Although it's yummy warm, it is not recommendable since the ganache will melt.​

 

Now to the ganache (the icing)

 

Chop the dark chocolate and milk chocolate and add the salt. Heat the thickened cream until it starts to boil (is possible use the microwave for this part). Then immediately pour over chocolate.

 

Leave for a couple of minutes so the chocolate can soften.

 

Mix till choclate is smooth without any lumps. To make the ganache look perfect I usually put it in a zip bag. Removing the air and leave at room temperature overnight.

Now, there is only covering and eat.

 

PS: If you want a creamy ganache you can whisk the chocolate ganache and you have something similar the buttercream.​
